One Pot Chicken & Rice

Ingredients
- 1 LB – Chicken Breasts, boneless/skinless
- 1 TB – Olive Oil
- 1 – Small onion, diced
- 2 Clove – Garlic, minced
- 1 Cup – White Rice, rinsed
- 1 ½ Cup – Chicken Broth
- 1 Bottle – Wild Buds Peri Peri Sauce
- 1 tsp – Salt
- ½ tsp – Black Pepper
- 1 Cup – Frozen Peas
- Chopped Parsley for Garnish
Cooking Instructions
- Set Instant Pot to sauté mode. Add olive oil and onion; cook 2–3 minutes until softened. Add garlic and cook 30 seconds more.
- Add chicken pieces, salt, and pepper. Sauté 3–4 minutes until chicken starts to brown.
- Add rice, chicken broth, and Wild Buds Peri Peri sauce. Stir to combine, making sure rice is submerged.
- Seal Instant Pot lid and cook on high pressure for 8 minutes.
- Allow natural pressure release for 10 minutes, then quick release any remaining pressure.
- Stir in frozen peas, if using, and let sit 2 minutes to heat through.
- Garnish with chopped parsley and serve hot.
