One Pot Chicken & Rice

Ingredients

  • 1 LB – Chicken Breasts, boneless/skinless
  • 1 TB – Olive Oil
  • 1 – Small onion, diced
  • 2 Clove – Garlic, minced
  • 1 Cup – White Rice, rinsed
  • 1 ½ Cup – Chicken Broth
  • 1 Bottle – Wild Buds Peri Peri Sauce
  • 1 tsp – Salt
  • ½ tsp – Black Pepper
  • 1 Cup – Frozen Peas
  • Chopped Parsley for Garnish

Cooking Instructions

  1. Set Instant Pot to sauté mode. Add olive oil and onion; cook 2–3 minutes until softened. Add garlic and cook 30 seconds more.
  2. Add chicken pieces, salt, and pepper. Sauté 3–4 minutes until chicken starts to brown.
  3. Add rice, chicken broth, and Wild Buds Peri Peri sauce. Stir to combine, making sure rice is submerged.
  4. Seal Instant Pot lid and cook on high pressure for 8 minutes.
  5. Allow natural pressure release for 10 minutes, then quick release any remaining pressure.
  6. Stir in frozen peas, if using, and let sit 2 minutes to heat through.
  7. Garnish with chopped parsley and serve hot.
