Peanut Satay Chicken with Lo Mein

Ingredients

  • 1 LB – Boneless, skinless chicken thighs or breasts, sliced thin
  • 8 OZ – Lo mein noodles 
  • 2 TB – Toasted Sesame Oil
  • 2 CUP – Stir-fry vegetables (bell peppers, carrots, snap peas, or broccoli)
  • 1 Botlle – Wild Buds Peanut Satay Sauce
  • 2 TB – Soy sauce
  • 1 TB – Lime juice (optional)
  • 1 tsp – Garlic, minced
  • 1 tsp – Ginger, minced
  • ¼ CUP – Green onions, sliced
  • 2 TB – Peanuts, chopped (for garnish)

Cooking Instructions

  1. Cook lo mein noodles according to package directions. Drain and set aside.
  2. In a large skillet or wok, heat oil over medium-high heat.
  3. Add sliced chicken and cook 5–7 minutes until browned and cooked through.
  4. Add garlic and ginger; cook for 1 minute until fragrant.
  5. Add vegetables and stir-fry for 3–4 minutes until just tender.
  6. Stir in Wild Buds Peanut Satay sauce, soy sauce, and lime juice. Simmer for 2–3 minutes to heat through.
  7. Add cooked noodles to the pan and toss to coat evenly with sauce.
  8. Garnish with green onions and chopped peanuts before serving.
