Peanut Satay Chicken with Lo Mein

Ingredients
- 1 LB – Boneless, skinless chicken thighs or breasts, sliced thin
- 8 OZ – Lo mein noodles
- 2 TB – Toasted Sesame Oil
- 2 CUP – Stir-fry vegetables (bell peppers, carrots, snap peas, or broccoli)
- 1 Botlle – Wild Buds Peanut Satay Sauce
- 2 TB – Soy sauce
- 1 TB – Lime juice (optional)
- 1 tsp – Garlic, minced
- 1 tsp – Ginger, minced
- ¼ CUP – Green onions, sliced
- 2 TB – Peanuts, chopped (for garnish)
Cooking Instructions
- Cook lo mein noodles according to package directions. Drain and set aside.
- In a large skillet or wok, heat oil over medium-high heat.
- Add sliced chicken and cook 5–7 minutes until browned and cooked through.
- Add garlic and ginger; cook for 1 minute until fragrant.
- Add vegetables and stir-fry for 3–4 minutes until just tender.
- Stir in Wild Buds Peanut Satay sauce, soy sauce, and lime juice. Simmer for 2–3 minutes to heat through.
- Add cooked noodles to the pan and toss to coat evenly with sauce.
- Garnish with green onions and chopped peanuts before serving.
