Peanut Satay Chicken Lettuce Wraps

Ingredients

  • 2 LB – Boneless, skinless chicken breasts or thighs
  • 1 Bottle – Wild Buds Peanut Satay Sauce
  • 1 tsp – Garlic, minced
  • 1 tsp – Ginger, minced
  • 1 CUP – Water chestnuts, diced
  • ¼ CUP – Green onions, sliced
  • 1 HEAD – Butter lettuce or romaine leaves, separated
  • ½ CUP – Shredded carrots (optional topping)
  • ¼ CUP – Chopped peanuts (optional garnish)

Cooking Instructions

  1. Place chicken in the slow cooker and pour the Wild Buds Peanut Satay sauce over the top.
  2. Cover and cook on Low for 4 hours or High for 2 hours, until chicken is tender.
  3. Remove chicken and shred with two forks.
  4. Stir in diced water chestnuts and green onions. Return mixture to the slow cooker to warm through for 10–15 minutes.
  5. Spoon chicken mixture into lettuce leaves.
  6. Top with shredded carrots and chopped peanuts, if desired.
