Peanut Satay Chicken Lettuce Wraps

Ingredients
- 2 LB – Boneless, skinless chicken breasts or thighs
- 1 Bottle – Wild Buds Peanut Satay Sauce
- 1 tsp – Garlic, minced
- 1 tsp – Ginger, minced
- 1 CUP – Water chestnuts, diced
- ¼ CUP – Green onions, sliced
- 1 HEAD – Butter lettuce or romaine leaves, separated
- ½ CUP – Shredded carrots (optional topping)
- ¼ CUP – Chopped peanuts (optional garnish)
Cooking Instructions
- Place chicken in the slow cooker and pour the Wild Buds Peanut Satay sauce over the top.
- Cover and cook on Low for 4 hours or High for 2 hours, until chicken is tender.
- Remove chicken and shred with two forks.
- Stir in diced water chestnuts and green onions. Return mixture to the slow cooker to warm through for 10–15 minutes.
- Spoon chicken mixture into lettuce leaves.
- Top with shredded carrots and chopped peanuts, if desired.
